  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cocoa powder
  • 1 1/2 cups vegetable oil
  • 1 cup buttermilk, at room temperature
  • 2 large eggs, at room temperature
  • 2 tbsp red food coloring
  • 1 tsp vanilla extract
  • 1 tsp white vinegar

Instructions

  1. Preheat the oven and prep the pans by greasing and flouring two 9-inch round cake pans.
  2. Sift together the flour, sugar, baking soda, salt, and cocoa powder in a large bowl.
  3. Mix the vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and white vinegar in another bowl until combined.
  4. Combine the wet ingredients with the dry ingredients and mix until smooth, being careful not to overmix.
  5. Divide the batter evenly between the prepared pans.
  6. Bake in the preheated oven for 25-30 minutes or until a toothpick comes out clean.
  7. Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  8. Frost the cooled cakes with cream cheese icing and serve.
