A simple yet elegant Chicken Milanese, featuring crispy golden chicken breasts served with fresh lemon.

  • 2 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • Salt and pepper to taste
  • Olive oil for frying
  • Lemon wedges for serving

Instructions

  1. Preheat the oven to 200°F (93°C) to keep the chicken warm once it’s cooked.
  2. Place the flour in a shallow dish and season it generously with salt and pepper.
  3. In another shallow dish, beat the eggs until they are fully combined.
  4. In a third dish, mix together the breadcrumbs and grated Parmesan cheese.
  5. Pound the chicken breasts gently until they are about 1/2 inch thick.
  6. Dredge each chicken breast in the seasoned flour, then dip it into the beaten eggs, and finally coat it with the breadcrumb and Parmesan mixture.
  7. Heat enough olive oil in a large skillet over medium-high heat.
  8. Fry the chicken breasts for 3-4 minutes on each side until golden brown.
  9. Transfer the cooked chicken to a baking sheet and place it in the warm oven.
  10. Plate the chicken with lemon wedges on the side for serving.

Notes

For the crispiest chicken, avoid overcrowding the skillet while frying. Leftovers can be stored in an airtight container for up to 3 days.
