A refreshing Zucchini Noodle Salad featuring spiralized zucchini, cherry tomatoes, basil, and a zesty lemon dressing—perfect for summer meals.

Ingredients

  • 2 medium zucchinis
  • 1 cup cherry tomatoes
  • 1/4 cup red onion
  • 1/4 cup fresh basil
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Spiralize the zucchinis using a spiralizer to create whimsical noodles.
  2. Combine the spiralized zucchini noodles with halved cherry tomatoes, diced red onion, and chopped fresh basil in a large bowl.
  3. Whisk together olive oil, lemon juice, salt, and pepper in a small bowl until well combined.
  4. Drizzle the dressing over the salad mix and toss gently to coat all the ingredients.
  5. Chill in the fridge for 30 minutes before serving or enjoy immediately.

Notes

If you don’t have a spiralizer, use a vegetable peeler for ribbons or slice the zucchinis thinly. For a crunch, add bell peppers or for creaminess, add avocado.
