Crispy and delicious Zucchini Fritters that are easy to make and perfect for any occasion!

Ingredients

  • 2 medium zucchinis
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Grate the zucchini using a box grater or food processor.
  2. Squeeze out excess moisture using a clean kitchen towel.
  3. Combine the grated zucchini, flour, Parmesan cheese, eggs, garlic powder, salt, and pepper in a large bowl.
  4. Heat oil in a large skillet over medium heat.
  5. Drop spoonfuls of the mixture into the skillet and flatten them slightly.
  6. Cook until golden brown, about 4-5 minutes on each side.
  7. Drain on paper towels and serve warm.

Notes

Serve with Greek yogurt or sour cream for dipping and enjoy as a snack or side dish.
