Crispy and tender zucchini fritters that capture the essence of summer, perfect as a snack, appetizer, or light meal.

  • 2 medium zucchinis, grated
  • 1/2 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 large egg, beaten
  • Oil for frying

Instructions

  1. Grate the zucchinis and place them in a bowl. Sprinkle with salt and let sit for about 10 minutes to draw out moisture.
  2. Drain excess moisture from the zucchinis to ensure your fritters aren’t soggy.
  3. Combine the grated zucchini, flour, Parmesan cheese, garlic powder, pepper, and beaten egg in a mixing bowl. Mix until well combined.
  4. Heat oil in a frying pan over medium heat – you want it hot enough for a nice, crispy exterior.
  5. Drop spoonfuls of the zucchini mixture into the pan and flatten slightly with a spatula.
  6. Fry until golden brown on both sides, about 3-4 minutes per side.
  7. Remove and drain on paper towels. Serve warm!

Notes

These fritters can be stored in an airtight container in the refrigerator for up to three days. Reheat them in a skillet to regain their lovely crispness.
