Delightful crispy fritters made from fresh zucchini and sweet corn, perfect as a snack or side dish.

  • 2 medium zucchinis, grated
  • 1 cup corn kernels (fresh or frozen)
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1/2 teaspoon baking powder
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. Prepare the Zucchini: In a bowl, mix the grated zucchini with a pinch of salt and let it sit for 10 minutes.
  2. Squeeze Out Excess Moisture: After 10 minutes, use a clean kitchen towel or cheesecloth to squeeze out as much moisture as possible from the zucchini.
  3. Combine Ingredients in a Bowl: In a separate bowl, combine the zucchini, corn kernels, flour, grated Parmesan cheese, eggs, baking powder, salt, and pepper.
  4. Heat the Oil: In a skillet, heat vegetable oil over medium heat until it shimmers.
  5. Form the Fritters: Drop spoonfuls of the mixture into the skillet and flatten them gently.
  6. Cook Until Golden: Cook the fritters for about 3-4 minutes on each side until golden brown.
  7. Drain and Serve: Transfer the fritters onto paper towels to drain excess oil and serve hot.

Notes

Serve with sour cream, yogurt sauce, or salsa for added flavor. For leftovers, store in an airtight container in the refrigerator for up to 3 days.
