A heartwarming Zucchini Casserole that combines fresh zucchini, cheese, and breadcrumbs for a delightful comfort food experience.

Ingredients

  • 2 medium zucchinis, sliced
  • 1 cup shredded cheese (your favorite kind!)
  • 1/2 cup breadcrumbs
  • 1/2 cup chopped onion
  • 2 eggs, beaten
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the sliced zucchinis, shredded cheese, breadcrumbs, chopped onion, beaten eggs, salt, and pepper in a large mixing bowl.
  3. Grease a baking dish liberally with olive oil.
  4. Pour the mixture into the greased baking dish and spread it evenly.
  5. Bake for 30-35 minutes, or until the top is golden brown and the casserole is set in the middle.
  6. Let it cool slightly before cutting and serving.

Notes

Make sure to squeeze out some moisture from the zucchini if it seems watery. You can prepare it a day ahead and refrigerate.
