Decadent and moist brownies made with grated zucchini for a healthier twist on this classic treat.

  • 1 cup grated zucchini
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. Mix together the grated zucchini, sugar, brown sugar, vegetable oil, and vanilla extract in a large mixing bowl.
  3. Whisk together the flour, cocoa powder, baking soda, baking powder, and salt in another bowl.
  4. Gradually add the dry ingredients into the bowl with the wet ingredients, mixing just until combined.
  5. Pour the brownie batter into the prepared baking dish and spread it evenly.
  6. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the brownies to cool in the dish before cutting them into squares.

Notes

Make sure to squeeze out excess water from the grated zucchini to avoid soggy brownies. Store in an airtight container at room temperature or freeze individual squares wrapped in plastic wrap for up to three months.
