Decadent brownies made with grated zucchini for a deliciously moist and slightly healthy twist.

Ingredients

  • 1 cup grated zucchini
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your baking dish.
  2. Combine the grated zucchini with the sugar and brown sugar in a large bowl.
  3. Add the vegetable oil, eggs, and vanilla extract to the zucchini mixture and stir until smooth.
  4. Whisk the flour, cocoa powder, baking powder, baking soda, and salt in a separate bowl.
  5. Gradually add the dry mixture to the zucchini blend, stirring gently until just combined.
  6. Fold in the chocolate chips if using.
  7. Pour the brownie batter into the prepared baking dish and spread evenly.
  8. Bake for 25-30 minutes until a toothpick comes out clean.
  9. Cool in the dish before slicing into squares.

Notes

For additional flavor, consider adding nuts, dried fruit, or spices like cinnamon.
