2 cups grated zucchini
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 cup granulated sugar
1/2 cup vegetable oil
3 large eggs
1 teaspoon vanilla extract
1/2 cup chopped walnuts or pecans (optional)
Instructions
Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
Combine the all-purpose flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a mixing bowl.
Mix the granulated sugar, vegetable oil, eggs, and vanilla extract in another bowl until smooth. Stir in the grated zucchini until well incorporated.
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chopped nuts if using.
Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack.
