2 tablespoons cold water
2 cups heavy cream
1 cup whole milk
â…“ cup granulated sugar
6 ounces white chocolate, finely chopped
½ teaspoon peppermint extract
½ teaspoon vanilla extract
Pinch of salt

Instructions
Bloom the gelatin: In a small bowl, sprinkle the gelatin over the cold water and let it sit for 5 to 10 minutes.
Heat the cream mixture: In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring occasionally, until the sugar dissolves and the mixture is steaming but not boiling.
Add the white chocolate: Remove the saucepan from the heat and stir in the chopped white chocolate until fully melted and smooth.
Add gelatin and flavor: Stir in the bloomed gelatin until completely dissolved. Then add the peppermint extract, vanilla extract, and a pinch of salt.
Strain the mixture: Pour through a fine-mesh sieve into a large bowl to remove undissolved bits for a silky texture.
Pour and chill: Distribute the mixture into ramekins or serving glasses and refrigerate for at least 4 hours until set.
Unmold and decorate: Dip ramekins in hot water briefly, invert onto serving plates, and garnish with toppings.
