White Chocolate Macadamia Cookies

Delightful cookies with crispy edges and chewy centers, filled with white chocolate chips and macadamia nuts.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips
  • 1 cup macadamia nuts, chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Beat in the eggs one at a time and then stir in the vanilla extract.
  4. Whisk together the flour, baking soda, and salt in another bowl, then gradually blend it into the creamed mixture.
  5. Fold in the white chocolate chips and chopped macadamia nuts.
  6. Drop spoonfuls of dough onto ungreased baking sheets.
  7. Bake for 9 to 11 minutes or until the edges are golden brown.
  8. Allow to cool on baking sheets for a few minutes before transferring to wire racks.

Notes

For softer cookies, underbake slightly; they will firm up as they cool. Store leftovers in an airtight container for up to 5 days.
