A creamy, dreamy dessert that is simple to make and perfect for any occasion, reminiscent of summer afternoons in the kitchen.

Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup sugar
  • 1 tablespoon vanilla bean paste (or 1 vanilla bean, split)
  • 2 1/2 teaspoons unflavored gelatin
  • 3 tablespoons cold water

Instructions

  1. Combine the heavy cream, whole milk, sugar, and vanilla bean paste in a saucepan.
  2. Heat over medium heat until the sugar dissolves and the mixture is hot but not boiling.
  3. Sprinkle the gelatin over the cold water in a small bowl and let it sit for about 5 minutes until it blooms.
  4. Add the bloomed gelatin to the hot cream mixture and stir until dissolved.
  5. Remove from heat and allow to cool slightly.
  6. Pour the mixture into serving cups or molds and refrigerate until set, about 4 hours or overnight.
  7. Serve unmolded or directly in cups, optionally with fresh berries or a drizzle of caramel.

Notes

Store leftovers in the refrigerator for up to 3 days. For best results, consume fresh.
