  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 4 oz cream cheese, softened
  • 1/4 cup granulated sugar (for filling)
  • 1 large egg yolk
  • 1/4 teaspoon vanilla extract (for filling)

Instructions

  1. Cream the butters and sugars in a large mixing bowl until light and airy.
  2. Add the whole egg and vanilla extract, whisking until smooth.
  3. Combine the flour, baking soda, and salt in a separate container, then mix into the wet batter.
  4. Stir in the semi-sweet chocolate chips until evenly distributed.
  5. Make the cheesecake filling by whisking cream cheese with sugar, then stir in the egg yolk and vanilla.
  6. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Assemble the cookies by placing dough on the sheet, pressing a well into each ball, adding cheesecake filling, and covering with more dough.
  8. Bake for 12-15 minutes until edges turn golden brown.
  9. Cool on the pan for a few minutes before transferring to a wire rack.
