A light and refreshing Chicken Tzatziki Bowl with juicy grilled chicken, creamy tzatziki, and fresh vegetables.

Ingredients

  • 1 lb Chicken Breast
  • 2 tbsp Olive Oil
  • 1 tsp Garlic Powder
  • 1 tsp Paprika
  • Salt & Black Pepper to taste
  • 2 cups Cooked Rice (white, brown, or jasmine)
  • 1 Cucumber, diced
  • 1 cup Cherry Tomatoes, halved
  • 1 Red Onion, diced
  • 1/4 cup Parsley, chopped
  • 1 cup Greek Yogurt
  • 2 tbsp Lemon Juice
  • 1 tbsp Dill

Instructions

  1. Marinate the Chicken: Place the chicken breast in a bowl and drizzle with olive oil, garlic powder, paprika, salt, and pepper. Let it sit for at least 30 minutes.
  2. Cook the Chicken: Heat the grill or skillet over medium-high heat and cook the chicken for about 6-7 minutes per side, until it reaches an internal temperature of 165°F.
  3. Prepare the Tzatziki Sauce: In a separate bowl, combine Greek yogurt, diced cucumber, lemon juice, dill, salt, and pepper. Mix until creamy.
  4. Chop the Veggies: Chop the cherry tomatoes, red onion, and fresh parsley.
  5. Assemble the Bowls: Scoop cooked rice into each bowl and top with grilled chicken, fresh veggies, and a dollop of tzatziki.
  6. Serve and Enjoy: Serve immediately while warm and enjoy the medley of flavors!

Notes
