A luxurious yet quick-to-prepare salmon dish cooked in a rich, buttery sauce with garlic, tomatoes, and fresh spinach, topped with Parmesan cheese.

Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a skillet over medium-high heat.
  2. Season the salmon fillets generously with salt, pepper, and Italian seasoning.
  3. Cook the seasoned salmon in the skillet for about 4-5 minutes on each side.
  4. Set the salmon aside once cooked to your desired doneness.
  5. Melt the butter in the same skillet and add the minced garlic.
  6. Sauté the halved cherry tomatoes and fresh spinach until slightly wilted.
  7. Stir in the grated Parmesan cheese until melted.
  8. Return the cooked salmon to the skillet, spooning the sauce over the top.
  9. Serve with freshly chopped parsley for garnish.

Notes

Customize the seasoning and vegetables to your family’s taste. Try swapping spinach for kale or adding red pepper flakes for a bit of heat.
