Delightful Tuscan Butter Salmon with garlic, cherry tomatoes, and spinach, perfect for a family meal.

Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach leaves
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese for garnish
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season salmon fillets with salt and pepper. Add them to the skillet, cooking for about 4-5 minutes on each side until golden brown and cooked through.
  3. Remove the salmon from the skillet and set aside.
  4. Melt the butter and add the minced garlic. Cook until fragrant, about 1 minute.
  5. Add the halved cherry tomatoes and sauté until they soften, about 2-3 minutes.
  6. Stir in the spinach and Italian seasoning. Cook until the spinach wilts.
  7. Return the salmon to the skillet, spooning the flavorful sauce over it.
  8. Serve garnished with freshly grated Parmesan cheese and fragrant basil leaves.

Notes

For a lighter option, use olive oil or a plant-based butter substitute. Leftovers can be stored in an airtight container in the fridge for up to 2 days.
