A delightful salmon dish enveloped in a luscious garlic butter sauce, complemented by cherry tomatoes and spinach.

Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Heat the olive oil in a large skillet over medium heat until it glistens but is not smoking.
  2. Season the salmon fillets generously with salt and pepper, then place them skin-side down in the hot skillet. Cook for about 4-5 minutes on each side, until cooked through and golden crust forms.
  3. Remove the salmon from the skillet and let it rest on a plate.
  4. Add the butter and minced garlic to the same skillet. Sauté for about a minute until fragrant, avoiding browning.
  5. Add the halved cherry tomatoes and spinach, along with Italian seasoning. Cook for about 2-3 minutes until spinach has wilted and tomatoes are tender.
  6. Return the salmon fillets to the skillet, spooning the buttery sauce over them. Heat together for an additional minute.
  7. Serve warm with fresh lemon wedges on the side.

Notes

Perfectly pairs with creamy mashed potatoes or a citrusy quinoa salad. A glass of crisp white wine complements the meal beautifully.
