  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat the olive oil over medium-high heat in a large skillet.
  2. Season the salmon fillets with salt, pepper, and Italian seasoning.
  3. Sear the seasoned salmon for about 4-5 minutes on each side or until cooked through.
  4. Add the butter to the skillet and let it melt completely.
  5. Cook the minced garlic in the melted butter until fragrant, about 1 minute.
  6. Sauté the halved cherry tomatoes until they soften and start to burst.
  7. Fold in the spinach and sauté until wilted.
