A vibrant and flavorful one-bowl meal combining taco flavors with fresh salad ingredients, perfect for busy weeknights.

Ingredients

Scale
  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 packet taco seasoning
  • 4 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cup canned black beans, rinsed and drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 avocado, diced
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup salsa
  • 1/4 cup sour cream (optional)
  • Tortilla chips (optional)

Instructions

  1. Sauté the turkey: In a large skillet, heat olive oil over medium heat. Add the ground turkey and cook until browned, about 5-7 minutes.
  2. Spice it up: Stir in the taco seasoning and follow the package directions, typically adding a bit of water and simmering until combined.
  3. Build your salad base: In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, black beans, corn, and diced avocado.
  4. Incorporate the turkey: Once the turkey is cooked, let it cool slightly and add it to the bowl of salad ingredients.
  5. Mix and marry the flavors: Gently toss the salad so that all ingredients are distributed evenly.
  6. Serve with flair: Top with shredded cheese, a dollop of salsa, and sour cream, if desired. Add tortilla chips for extra crunch.

Notes

This salad can be made in advance by prepping ingredients separately. For a spicy kick, add jalapeños or hot sauce.
