Turkey Stuffed Peppers

Delicious and colorful turkey stuffed peppers packed with protein and flavor, perfect for busy weeknights.

Ingredients

  • 4 large bell peppers
  • 1 pound ground turkey
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Cook the ground turkey over medium heat until browned.
  4. Stir in the cooked rice, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
  5. Fill each bell pepper with the turkey mixture and place them in a baking dish.
  6. Optionally, sprinkle shredded cheese on top of each stuffed pepper.
  7. Cover the dish with foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes until the peppers are tender and the cheese is melted.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 4 days. Freeze for up to 3 months.
