Turkey Stuffed Peppers are a vibrant, wholesome meal that combines savory turkey and spices stuffed into sweet bell peppers.

  • 4 large bell peppers
  • 1 lb ground turkey
  • 1 cup cooked rice
  • 1 can diced tomatoes (14.5 oz)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Sauté the diced onion and minced garlic in a skillet over medium heat until soft, about 3-4 minutes.
  4. Add the ground turkey and cook until browned, about 5-7 minutes.
  5. Stir in the cooked rice, diced tomatoes, cumin, chili powder, salt, and pepper, and mix well.
  6. Stuff each bell pepper with the turkey mixture.
  7. Place the stuffed peppers upright in a baking dish and cover with foil; bake for 30 minutes.
  8. Remove the foil, sprinkle cheese on top (if using), and bake for an additional 10-15 minutes until cheese is melted and peppers are tender.
  9. Garnish with fresh parsley before serving.

Notes

These peppers can be customized with different spices or fillings, and they freeze well for meal prep.
