  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley

  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • Olive oil for cooking
  • Cooked vegetables for serving (e.g., broccoli, carrots)
  • Rice or quinoa for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine ground turkey, breadcrumbs, Parmesan cheese, egg, garlic, parsley, salt, pepper, and Italian seasoning in a large bowl.
  3. Shape the mixture into meatballs, about 1 inch in diameter.
  4. Arrange the meatballs on a baking sheet lined with parchment paper.
  5. Drizzle the meatballs with olive oil.
  6. Bake for 18-20 minutes or until golden brown.
  7. Prepare your choice of cooked vegetables and rice or quinoa.
  8. Pack the meatballs, vegetables, and rice/quinoa into meal prep containers.
