A delightful Tuna Poke Bowl featuring sushi-grade tuna, avocado, and fresh vegetables, ideal for a quick and flavorful meal.

Ingredients

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 1/2 lb sushi-grade tuna, diced
  • 1 avocado, diced
  • 1/2 cucumber, sliced
  • 2 green onions, sliced
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp rice vinegar
  • Salt to taste
  • Sesame seeds for garnish

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine the rice and water in a pot and bring to a boil.
  3. Reduce the heat to low, cover, and let it simmer for 18-20 minutes. Then, remove from heat and let it sit for 10 minutes.
  4. Mix your diced tuna with soy sauce, sesame oil, rice vinegar, and a pinch of salt. Let it marinate.
  5. Fluff the rice with a fork and divide it into bowls.
  6. Top the rice with the marinated tuna, diced avocado, sliced cucumber, and green onions.
  7. Sprinkle sesame seeds over the top and serve immediately.

Notes

Serve with iced green tea or sparkling water for a refreshing drink. Leftovers can be stored in an airtight container for up to 24 hours, but keep ingredients separate to maintain freshness.
