  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1/3 cup unsalted butter, melted
  • 4 large egg yolks
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup fresh key lime juice
  • 1 teaspoon lime zest
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine graham cracker crumbs, sugar, and melted butter in a bowl to make the crust.
  3. Press the mixture firmly into a pie dish.
  4. Bake the crust for 8-10 minutes until golden brown.
  5. Whisk the egg yolks, sweetened condensed milk, key lime juice, and lime zest in another bowl.
  6. Pour the filling into the cooled crust.
  7. Bake for an additional 15 minutes to set the filling.
  8. Cool the pie at room temperature, then refrigerate for a minimum of 3 hours.
  9. Whip heavy whipping cream with powdered sugar until soft peaks form.
  10. Spread the whipped cream over the cooled pie before serving.

Notes

For a zestier filling, don’t hesitate to add extra lime zest. Ensure the pie is well-chilled for the best flavor and texture.
