Buttery shortbread cookies infused with fresh lime zest and juice, topped with a light lime glaze.

  • 1/2 cup powdered sugar
  • 1/4 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • Zest of 1 lime
  • 1 tablespoon fresh lime juice
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons fresh lime juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the softened butter, powdered sugar, and granulated sugar together until light and fluffy.
  3. Incorporate the lime zest and lime juice into your creamed mixture, mixing until fully combined.
  4. Gradually add the flour and salt to the mixture, combining until the dough comes together in a cohesive ball.
  5. Roll the dough into a log shape, wrap it in plastic wrap, and refrigerate for at least an hour.
  6. Once chilled, remove the dough from the fridge and slice it into 1/4-inch thick rounds.
  7. Bake the cookies in your preheated oven for 12-15 minutes or until the edges are lightly golden.
  8. While the cookies cool, whisk together the powdered sugar and lime juice for the glaze until smooth and glossy.
  9. Drizzle the glaze over the cooled cookies and allow it to set before serving.

Notes

Store in an airtight container at room temperature for up to a week. They freeze well for up to 3 months.
