Delightful mini shepherd’s pie bites featuring flaky pastry filled with savory ground meat, vibrant veggies, and creamy mashed potatoes.

Ingredients

  • 1 lb ground beef or lamb
  • 1 cup peas
  • 1 cup carrots, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 cup mashed potatoes
  • 1 package of pastry cups
  • 1 cup cheddar cheese, shredded
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Brown the ground beef or lamb with chopped onions and minced garlic in a skillet.
  3. Mix in peas, diced carrots, thyme, and rosemary. Season with salt and pepper; let cook until veggies are tender.
  4. Fill each pastry cup with the meat and vegetable mixture.
  5. Top each cup with a dollop of mashed potatoes.
  6. Sprinkle shredded cheddar cheese on top.
