Make quick and juicy shredded chicken for customizable tacos using the Instant Pot.

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 packet taco seasoning
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • Taco shells or tortillas
  • Toppings: lettuce, cheese, salsa, avocado

Instructions

  1. Sauté the vegetables by adding olive oil to the Instant Pot, then cook diced onion and bell pepper until soft.
  2. Season the chicken breasts with taco seasoning and place them in the pot.
  3. Add the chicken broth over the seasoned chicken.
  4. Cook on high pressure for 10 minutes with the lid closed.
  5. Release the pressure using the quick release method.
  6. Shred the chicken using two forks, mixing it with the juices in the pot.
  7. Assemble your tacos with shredded chicken and your favorite toppings.

Notes

For a smokier flavor, add smoked paprika or chipotle powder to the seasoning. Prep onions and peppers in advance for quicker cooking.
