  • 1 pound breakfast sausage
  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté the breakfast sausage in a skillet over medium heat until browned and cooked through. Drain any excess fat.
  3. Whisk together the eggs and milk in a large bowl. Season with salt and pepper.
  4. Layer the tater tots evenly in a greased 9×13 inch baking dish.
  5. Add the cooked sausage over the tater tots, then pour the egg mixture on top.
  6. Sprinkle the shredded cheddar cheese evenly over the top.
  7. Bake in the preheated oven for about 30-35 minutes, or until the eggs are set and the top is golden.
  8. Garnish with chopped green onions if desired before serving.
