A delightful recipe for Tanghulu, featuring fresh fruits coated in a crunchy, glass-like sugar shell.

Ingredients

  • Fresh fruits (like strawberries, grapes, or hawthorn berries)
  • Sugar
  • Water
  • Sticks for skewering

Instructions

  1. Prepare the fruits by washing and drying them. Cut larger fruits into bite-sized pieces.
  2. Mix sugar and water in a saucepan in a 1:1 ratio, stir until dissolved.
  3. Boil the mixture until it reaches the hard crack stage (300°F / 150°C).
  4. Skewer the prepared fruits onto sticks, leaving space at the bottom.
  5. Coat the skewered fruits in the bubbling sugar syrup.
  6. Cool and let the sugary shell harden on a parchment-lined tray.

Notes

For best results, use a candy thermometer and experiment with different fruits. Avoid refrigeration to maintain crispness.
