  • 8 ounces elbow macaroni
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 can diced tomatoes (14.5 oz), drained
  • 1 cup corn (frozen or canned)
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Cook the macaroni by bringing a pot of salted water to a boil and adding the elbow macaroni. Cook according to package directions until al dente. Drain and set aside.
  2. Brown the meat in a large skillet over medium heat until browned and fully cooked through. Drain any excess fat.
  3. Stir in the taco seasoning, then pour in the diced tomatoes, corn, and black beans. Cook for another 5 minutes until heated through.
  4. Combine the cooked macaroni with the meat mixture and mix thoroughly.
  5. Melt the shredded cheddar cheese by sprinkling it over the mixture and gently stirring until the cheese melts.
  6. Season with salt and pepper to taste.
  7. Garnish with chopped cilantro and serve hot.

Notes

Taco Pasta can be customized with different beans or cheeses, and it pairs well with tortilla chips and salsa.
