Taco Lasagna

A delicious fusion of Italian and Mexican flavors that will tantalize your taste buds.

Ingredients

  • 12 lasagna noodles
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 2 cups salsa
  • 2 cups shredded cheese (cheddar and/or Mexican blend)
  • 1 cup sour cream
  • Chopped green onions and cilantro for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions. Drain and set aside.
  3. Sauté the ground beef or turkey in a skillet until browned. Drain excess fat. Stir in taco seasoning, black beans, corn, and 1 cup of salsa.
  4. Layer in a baking dish: spread a layer of the meat mixture, then a layer of noodles, followed by a layer of sour cream and cheese. Repeat layers and finish with noodles and remaining salsa on top.
  5. Bake covered with aluminum foil for 25 minutes. Remove the foil, sprinkle with remaining cheese, and bake uncovered for an additional 15 minutes.
  6. Cool for a few minutes before slicing. Garnish with green onions and cilantro before serving.

Notes

Leftover Taco Lasagna can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 3 months.
