A vibrant and hearty Sweet Potato Hash that combines sweet potatoes with bell peppers, onions, and spices for a comforting meal perfect any time of day.

Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: chopped fresh herbs (like parsley or cilantro)
  • Optional: fried or poached eggs for serving

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced sweet potatoes to the skillet and cook for about 10 minutes, stirring occasionally.
  3. Toss in the diced onion, red bell pepper, and minced garlic into the skillet. Continue to cook for another 10 minutes, stirring often.
  4. Season the mixture with salt and pepper to taste. If you’re using fresh herbs, chop them now and stir them into the skillet.
  5. Serve your Sweet Potato Hash hot, topped with a fried or poached egg if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. You can freeze the hash for up to a month.
