Delightfully fluffy and slightly sweet, these cornbread muffins make for a perfect treat at any meal, whether enjoyed warm with butter or topped with honey.

  • 1 cup fine or medium ground cornmeal
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup melted butter
  • 2 tablespoons honey (optional, for batter or topping)
  • Optional toppings: Butter, Honey, Fruit jam, Whipped cream, Maple syrup, Fresh berries, Cream cheese

Instructions

  1. Preheat the oven to 375°F (190°C). Line a standard 12-cup muffin pan with paper liners or lightly grease each cup.
  2. Add the cornmeal, all-purpose flour, granulated sugar, baking powder, and salt to a large mixing bowl and whisk together.
  3. Whisk the eggs in a separate bowl until smooth, then incorporate the milk and melted butter.
  4. Pour the wet mixture into the dry ingredients and gently fold until just combined.
  5. Spoon the batter into each muffin cup, filling about three-quarters full.
  6. Bake for 15 to 18 minutes until golden brown; check with a toothpick for doneness.
  7. Remove from the oven and allow to cool for 5 minutes before transferring to a cooling rack.
  8. Serve warm with butter, honey, or any preferred toppings.

Notes

For extra moisture, consider adding a splash of buttermilk or melted butter. Customize with your favorite mix-ins like jalapeños or chocolate chips.
