Delightful and airy Strawberry Shortcake Cupcakes topped with fresh strawberries and luscious whipped cream.

  • 1/2 cup unsalted butter, room temperature
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 1/2 teaspoons vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk, room temperature
  • 3/4 cup fresh strawberries, diced small
  • 1–2 teaspoons all-purpose flour (for strawberries)
  • 1 cup heavy whipping cream, cold
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract (for whipped cream)
  • 6 fresh strawberries, halved (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  2. Cream the butter and sugar together until pale and fluffy, about 2-3 minutes.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract until fully incorporated.
  4. Combine the flour, baking powder, and salt in a separate bowl.
  5. Alternate adding the dry ingredients to the butter mixture with the buttermilk, mixing gently until just combined.
  6. Fill the cupcake liners about two-thirds full with batter.
  7. Prepare the diced strawberries by tossing them in flour until lightly coated.
  8. Top each cupcake with floured strawberries, lightly pressing them into the batter.
  9. Bake for 18-20 minutes, or until lightly golden. A toothpick should come out clean.
  10. Cool the cupcakes in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  11. Whip the heavy cream, powdered sugar, and vanilla until soft peaks form.
  12. Assemble by piping or spooning whipped cream on top of each cooled cupcake and placing a halved strawberry for garnish.
  13. Serve after letting them sit at room temperature for 15 minutes.
