  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter (cold, cubed)
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 4 cups fresh strawberries (sliced)
  • 1/4 cup granulated sugar (for strawberries)
  • Whipped cream (for serving)

Instructions

  1. Mix the dry ingredients in a bowl.
  2. Cut in the cold, cubed butter until mixture resembles coarse crumbs.
  3. Combine wet ingredients, stirring gently until just mixed.
  4. Shape the dough into a circle about 1 inch thick on a floured surface.
  5. Cut out circles of dough and place on a baking sheet.
  6. Bake at 425°F (220°C) for 12 to 15 minutes until golden brown.
  7. Prepare the strawberries by tossing with sugar and letting sit for 10-15 minutes.
  8. Assemble the dessert with layers of shortcake, strawberries, and whipped cream.

Notes

For best results, use cold butter and avoid overmixing to keep the shortcake tender.
