A delightful and nostalgic summer dessert featuring buttery biscuits, fresh strawberries, and whipped cream.

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 1 cup heavy cream
  • 4 cups fresh strawberries, hulled and sliced
  • 1/4 cup sugar (for strawberries)
  • Whipped cream (for serving)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, mix the flour, sugar, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the heavy cream until just combined.
  5. Turn the dough onto a floured surface and pat it to 1-inch thickness.
  6. Cut into rounds and place on a baking sheet.
  7. Bake for 15-20 minutes or until golden.
  8. Meanwhile, mix sliced strawberries with 1/4 cup sugar and let sit for 10 minutes.
  9. Once the shortcakes are cooled, slice them in half, layer with strawberries, and top with whipped cream.

Notes

For the flakiest biscuits, ensure your butter is cold. Don’t overmix the dough to keep the biscuits light and airy.
