A delightful dessert that combines the sweet and tart flavors of strawberries and rhubarb, topped with a crunchy oat mixture.

  • 2 cups strawberries, hulled and sliced
  • 2 cups rhubarb, chopped
  • 3/4 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup butter, melted
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the hulled and sliced strawberries with the chopped rhubarb. Add sugar, cornstarch, and vanilla extract. Toss gently.
  3. Pour the fruit mixture into a greased baking dish.
  4. Mix the rolled oats, all-purpose flour, brown sugar, melted butter, and cinnamon in another bowl.
  5. Sprinkle the oat mixture over the fruit layer.
  6. Bake for 40-45 minutes until the topping is golden brown and the juices are bubbling.
  7. Let cool slightly before serving.
