A delightful Strawberry Rhubarb Crisp that celebrates the flavors of spring with a crispy oat topping over sweet strawberries and tart rhubarb.

Ingredients

  • 2 cups strawberries, hulled and sliced
  • 2 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1 cup brown sugar
  • 1/2 cup all-purpose flour
  • 1/2 cup butter, melted
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine strawberries, rhubarb, granulated sugar, and 1/4 cup flour in a bowl. Pour into a greased baking dish.
  3. Mix rolled oats, brown sugar, 1/2 cup flour, melted butter, and cinnamon in another bowl until crumbly.
  4. Sprinkle the oat mixture evenly over the fruit mixture.
  5. Bake in the preheated oven for about 45 minutes or until golden brown and bubbling.
  6. Serve warm, optionally topped with vanilla ice cream.

Notes

Serve with vanilla ice cream, whipped cream, or drizzle with custard. Garnish with fresh mint leaves.
