A delightful and easy-to-make summer dessert that features a moist vanilla cake topped with strawberry gelatin, fresh strawberries, and whipped cream.

Ingredients

  • 1 box of vanilla cake mix
  • 3 large eggs
  • 1 cup water
  • 1 pack (3 oz) strawberry gelatin
  • 1 cup boiling water
  • 1 cup cold water
  • 2 cups fresh strawberries, sliced
  • 1 container (8 oz) whipped cream or cool whip
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat the oven according to the cake mix instructions. Grease and flour a 9×13 inch baking pan to ensure a perfect, non-stick finish.
  2. Mix the cake mixture according to the package instructions, combining the vanilla cake mix, eggs, and water. Pour the batter into the prepared pan and bake as directed. When the cake is done, let it cool for about 15 minutes.
  3. Create poke holes all over the top of the cooled cake with a fork.
  4. Prepare the strawberry gelatin by dissolving it in 1 cup of boiling water, then add 1 cup of cold water.
  5. Soak the cake by pouring the gelatin mixture over it, allowing it to seep into the holes. Refrigerate for at least 2 hours or until set.
  6. Garnish the chilled cake with sliced strawberries, then dollop on the whipped cream or cool whip. Sprinkle with powdered sugar.
  7. Serve and enjoy every bite!

Notes

For best results, serve chilled! Keep in mind that this cake is great with a scoop of vanilla ice cream or alongside iced tea.
