A refreshing dessert combining the tartness of lemons with the sweetness of strawberries, perfect for summer gatherings.

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 cup chopped fresh strawberries
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking pan.
  2. Mix together the flour, powdered sugar, and softened butter until the mixture resembles coarse crumbs. Press into the bottom of the prepared baking pan.
  3. Beat together the granulated sugar, eggs, fresh lemon juice, lemon zest, salt, and baking powder until smooth.
  4. Stir in the chopped strawberries until well-distributed.
  5. Pour the mixture over the crust and bake for 25-30 minutes, or until set and slightly golden.
  6. Cool completely in the pan, then dust with powdered sugar before slicing into bars.

Notes

Serve with whipped cream or vanilla ice cream. They store in the refrigerator for up to four days.
