A luscious combination of fluffy cake, creamy strawberry ice cream, and fresh strawberries all wrapped in whipped cream. Perfect for summer celebrations!

  • 2 cups cake flour
  • 1 1/2 cups sugar
  • 1/2 cup butter, softened
  • 1 cup milk
  • 3 eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1 quart strawberry ice cream, softened
  • 1 cup strawberries, diced
  • 1 cup whipped cream
  • 1/2 cup strawberry crunch topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each.
  3. Combine the cake flour, baking powder, and milk until well blended. Gradually add to the creamed mixture.
  4. Add the vanilla extract and divide the batter between the prepared cake pans.
  5. Bake for 25-30 minutes until a toothpick comes out clean. Cool completely on a wire rack.
  6. Layer one cake on a serving platter, spread strawberry ice cream on top, then add diced strawberries.
  7. Assemble the second cake layer on top, frost with whipped cream, and top with strawberry crunch topping.
  8. Freeze for at least 2 hours before serving.

Notes

Make sure your ingredients are at room temperature for the best results. You can substitute the strawberry ice cream with your favorite flavor or add different fruits for a unique twist.
