Delightfully fluffy muffins filled with cream cheese and fresh strawberries, perfect for breakfast or a sweet snack.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 cup fresh strawberries, chopped
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix the flour, sugar, baking powder, and salt in a mixing bowl.
  3. Combine the milk, vegetable oil, and egg in another bowl.
  4. Gently mix the wet ingredients into the dry ingredients until just combined.
  5. Fold in the chopped strawberries until evenly distributed.
  6. Prepare the cream cheese mixture by beating the cream cheese, powdered sugar, and vanilla extract until smooth.
  7. Fill muffin cups halfway with batter, add a dollop of cream cheese mixture, then cover with more batter until cups are about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Cool the muffins for a few minutes before transferring them to a wire rack.

Notes

These muffins are best served warm and can be stored in an airtight container for up to three days at room temperature.
