Strawberry Cream Cheese Frosting

A creamy and fresh frosting featuring the delicious flavor of strawberries, perfect for cakes and cupcakes.

Ingredients

  • 1 cup fresh strawberries, hulled (or 1/2 cup freeze-dried strawberries, ground to powder)
  • 1 block (8 oz) full-fat cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 1/2 to 4 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Prepare the strawberries. If using fresh strawberries, purée them in a blender until smooth. Pour the purée into a small saucepan and simmer over medium-low heat for 8 to 10 minutes, stirring occasionally. Cool completely before using. If using freeze-dried, grind into a powder.
  2. Beat the cream cheese and butter in a large mixing bowl until smooth and creamy, about 2 to 3 minutes.
  3. Add the vanilla extract and salt, mixing until well incorporated.
  4. Incorporate the strawberry purée or powder, mixing on low speed until evenly distributed.
  5. Add the sifted powdered sugar, one cup at a time, mixing on low speed until combined.
  6. Whip on medium-high for 2 to 3 minutes until fluffy and holding its shape.
  7. Chill for 15 to 20 minutes if too soft for piping.
  8. Adjust the taste if needed, adding salt or extra strawberry as desired.

Notes

For a more intense strawberry flavor, use fresh strawberries. Store leftover frosting in an airtight container in the refrigerator for up to one week.
