  • 2 large eggs

  • 1 cup heavy whipping cream
  • 1 cup fresh strawberries, sliced

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, combine the vegetable oil, buttermilk, eggs, red food coloring, and vanilla extract. Mix until well combined.
  4. Gently fold the wet ingredients into the dry ingredients until just combined.
  5. Divide the batter evenly between the prepared pans. Bake in the preheated oven for 25-30 minutes.
  6. For the cheesecake filling, beat the softened cream cheese in a bowl until smooth. Gradually add the powdered sugar and mix until combined.
  7. Once the cakes have cooled, place one layer on a serving plate. Spread the cheesecake filling on top, then place the second layer on top.
  8. Chill the assembled cake in the refrigerator for at least 2 hours before serving.
