  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup strawberries, chopped
  • 1 package cream cheese (8 oz), softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the sugar and softened butter until smooth.
  3. Beat in the egg and vanilla extract until well combined.
  4. Combine the flour, baking soda, and salt in another bowl.
  5. Gradually mix dry ingredients into creamed mixture until just combined.
  6. Fold in the chopped strawberries gently.
  7. Drop dough onto ungreased baking sheets, leaving space between cookies.
  8. Mix the cream cheese, powdered sugar, and vanilla extract until smooth.
  9. Make a small indentation in each cookie and fill with cheesecake filling.
  10. Bake for 10-12 minutes until edges are lightly golden.
  11. Cool cookies on baking sheets before transferring to a wire rack.
