Instructions

  1. Preheat the oven to 350°F (175°C). Grease a mini muffin tin to ensure the cookie cups come out easily.
  2. Cream together the softened butter, granulated sugar, and brown sugar until the mixture is smooth and creamy.
  3. Beat in the egg and half a teaspoon of vanilla extract, mixing until well combined.
  4. Mix the all-purpose flour, baking powder, and salt in another bowl. Gradually blend this dry mixture into the creamed mixture until fully incorporated.
  5. Scoop about a tablespoon of dough into each muffin cup. Press the dough down gently with your fingers to form a cup shape.
  6. Bake for about 10-12 minutes or until the edges are lightly golden. Remove from the oven and let them cool in the tin for a few minutes.
  7. Beat together the softened cream cheese, powdered sugar, and remaining vanilla extract until smooth and creamy.
  8. Fill each cooled cookie cup with the cheesecake mixture.
