Ingredients

Scale
  • 1 box of vanilla cake mix
  • 3 large eggs
  • 1 cup of water
  • 1/3 cup of vegetable oil
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • 2 cups fresh strawberries, sliced

Instructions

  1. Preheat your oven according to the cake mix instructions.
  2. Prepare the vanilla cake mix following the package directions, using eggs, water, and oil. Pour the batter into greased cake pans.
  3. Bake as directed until a toothpick inserted in the center comes out clean. Allow the cakes to cool completely in the pans before removing.
  4. Mix the softened cream cheese until smooth. Add the powdered sugar and vanilla extract, blending until fully incorporated.
  5. Whip the heavy cream until stiff peaks form. Gently fold this whipped cream into the cream cheese mixture until combined.
  6. Layer one cake layer on a serving plate. Spread a generous layer of the cream cheese mixture on top, and then add a layer of sliced fresh strawberries.
  7. Repeat the layering process with the second cake layer, the cream cheese mixture, and strawberries.
  8. Finish with the third cake layer on top. Decorate the cake with remaining cream cheese mixture and strawberries as desired.
  9. Chill the assembled cake in the refrigerator for at least one hour before serving.

Notes

Make sure your cream cheese is at room temperature for a smooth filling. Dust strawberries with a light sugar to keep them firm when layering.
