A delightful and comforting dessert made with moist sponge cake and rich toffee sauce, perfect for sharing with loved ones.

Ingredients

  • 200g pitted dates
  • 250ml water
  • 1 tsp baking soda
  • 100g unsalted butter
  • 150g brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 200g all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 300ml heavy cream
  • 100g brown sugar (for sauce)
  • 50g unsalted butter (for sauce)

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a baking dish.
  2. Combine the pitted dates with water in a saucepan, bring to a boil, then add baking soda and let cool.
  3. Cream together the unsalted butter and brown sugar until fluffy.
  4. Add the two large eggs and vanilla extract into the butter mixture, mixing well.
  5. Incorporate the cooled date mixture into the butter mixture, blending until well mixed.
  6. Sift together the all-purpose flour, baking powder, and salt, then fold into the wet ingredients.
  7. Pour the batter into the prepared baking dish and bake for 30-35 minutes.
  8. Combine the heavy cream, remaining butter, and brown sugar in a saucepan to make the toffee sauce.
  9. Serve the warm pudding drizzled with the toffee sauce.

Notes

Serve warm with vanilla ice cream or whipped cream. Optionally include chopped nuts for texture.
