A delightful dessert featuring a moist sponge-like pudding soaked with rich toffee sauce, perfect for any occasion.

Ingredients

  • 200g dates, chopped
  • 250ml boiling water
  • 1 tsp baking soda
  • 100g unsalted butter, softened
  • 150g brown sugar
  • 2 large eggs
  • 200g all-purpose flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • Pinch of salt
  • For the toffee sauce:
  • 100g brown sugar
  • 100g unsalted butter
  • 200ml double cream

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a baking dish.
  2. Soak the chopped dates in boiling water mixed with baking soda for about 10 minutes.
  3. Cream together the softened butter and brown sugar until light and fluffy.
  4. Incorporate the eggs one at a time, followed by the vanilla extract.
  5. Combine the flour, baking powder, and pinch of salt until just mixed.
  6. Add the soaked date mixture, including the water, and stir to combine.
  7. Bake for 30-35 minutes, or until a skewer inserted comes out clean.
  8. Prepare the toffee sauce by melting the butter and brown sugar, then stirring in the double cream.
  9. Serve the pudding warm, drizzled with the toffee sauce.

Notes

Serve with vanilla ice cream or whipped cream for an elevated experience.
